Akara (Bean Cake) Recipe


Akara is a Nigerian breakfast recipe also known as Bean Cake. Akara is made with beans just like Moi Moi, in fact it’s almost the same method. It’s made with just 5 ingredients: Beans, Onions, Fresh pepper, Salt and vegetable Oil for frying. It is easy to make and very delicious too... Akara is served with Custard, Pap (Ogi, Akamu), Bread or Eko (also known as Agidi). When making Akara it is best to use freshly skinned beans, Use a very small quantity of water when grinding it so it comes out thick, You can use a watery mixture to make Akara, So you have to watch the water when your Blending or grinding the beans…
INGREDIENTS
·         Beans (White or Red)
·         Fresh Pepper
·         Onions
·         Salt
·         Vegetable/Palm Oil (For frying)
DIRECTIONS
·         Wash the beans, to remove the coat from the beans. Click here to see how to wash beans
·         Cut the pepper and onions into desirable sizes and Blend/Grind it with the de-coated beans until you get a very smooth mixture (Make sure you add as little water as possible)
NB: The less the water you add at the grinding stage, the more the beans batter will stay together during frying therefore reducing spatter.
PEPARARTION
1.       Set some vegetable/Palm Oil on the cooker to heat up. The oil should be at least 3 inches deep.
2.       Pour the grinded beans batter in a sizable bowl and stir in a continuous circular motion. You have to stir for a while (this stirring technique releases the gas that will act like a leaving agent to the beans particles making them rise and somehow stick together.
3.       Keep stirring until the ground beans appears whiter and you can perceive its peculiar aroma.
4.       Add some water and check to make sure the oil is Hot, The Oil should sizzle when it’s hot enough but not too hot so the akara don’t spatter when you scoop it in the oil
5.       When Oil is hot add salt to the beans batter and stir well
6.       Scoop the mixture with a tablespoon and slowly pour this into the oil. (Dipping the spoon into the oil a little bit helps reduce the spatter)
7.       Fry the underside until brown and flip to fry the top side too.
8.       When the akara balls are brown all over, remove and place in a sieve lined with paper towels.
9.       Serve and Enjoy with Custard, Pap (Ogi, Akamu), Bread or Eko.
